Dry aged ribeye
A whole rib primal from a single steer, aged on the bone for forty five days, then cut to order the morning it ships.
The sixth to twelfth rib
The muscle here does the least work and marbles the most. We age the whole rib on the bone, then cut to order rather than pre portioning into a case.
A whole rib primal from a single Santa Ynez steer, aged on the bone for forty five days in our own locker, then cut to a full inch and a quarter. The crust of the aged fat is trimmed by hand the morning it ships, which is why the weight is approximate and you are charged on what we actually cut.

The crust you get off this steak is not something I have managed with supermarket beef. Forty five days is exactly right, funky enough to notice and not so far that my children refuse it.
Arrived at 3pm still cold to the touch, paper wrapped, with the lot number on the tag. I traced it on the site out of curiosity and it matched. That detail is why I stopped shopping elsewhere.
Bought two for Eid and asked for a thicker cut in the notes. They called to confirm rather than guessing. Marbling was closer to BMS 7 than 6 on mine.
